Tertiary butyl hydroquinone or better known as TBHQ is a highly effective synthetic food-grade antioxidant. It is used to stabilize foods, fats and vegetable oils against oxidative deterioration. It is used as a preservative to extend the food storage life. It does not cause discolouration even in the presence of iron, and hence does not change the flavour or taste of the food to which it is added. It can be combined with other preservatives such as BHA. As a food additive, its E number is E319. It is added to a wide range of foods, with the highest limit (1000 mg/kg) permitted for frozen fish and fish products.
